Krewe du Vin: Meet the Chefs

Name: Jimmy Bannos, Sr.

Restaurant: Heaven on Seven, The Purple Pig, Chicago

What are you most looking forward to at Carnivale du Vin?:  Looking forward to helping Emeril celebrate the 10th anniversary for his foundation and looking forward to seeing some old friends.

If you weren’t a chef, what would you do?:  Guidance Counselor or own a chain of pre-schools to make sure kids get off on the right start.

Favorite ethnic cuisine?: This is a real tough one for me.  If my mom and grandmother were still around to cook for me, I would say Greek but I have to say my wife's italian cooking.  Italy is in the front running right now.

After you've been away traveling, on the road working, gone for a while….what is the first thing you make or crave when you finally get home?:  Believe it or not, when I get back from a long trip- I am always starving so I either go to Gibsons, a local steak house or I get an Italian Beef Sandwich somewhere.
