We are excited to introduce the Boudin, Bourbon & Beer Chef Spotlight series! This year, we asked a few of our participating chefs to pair their Boudin, Bourbon & Beer menu item with one of the many beer options that will be available from Abita. First up, Chef Frank Brigtsen!

INSPIRATION FOR YOUR DISH ?:

This year, for Boudin, Bourbon, & Beer, I am doing something completely different: a vegetarian boudin-inspired dish. Over the years at BB&B, I have noticed many folks looking for meatless options. With all of the many wonderful boudin and pork-centric offerings already on display, I have decided to embrace the challenge. My Smoked Mushroom Boudin will utilize smoked mushrooms for meaty flavor, caramelized trinity vegetables for depth of flavor, and roasted eggplant puree in lieu of the creamy richness of the liver found in traditional boudin. As BB&B is New Orleans’ premier culinary event of the year, it is important to me that everyone is able to enjoy foods to match their tastes.

FAVORITE OFF-DUTY DRINK?:

My favorite off-duty beverage is Abita Root Beer. Its rich complexity and depth of flavor mirrors what I look for in great Louisiana cuisine.

COOKING SOUNDTRACK?: 

My current fave musical inspiration is “Tilted”, by Christine and The Queens. I happened onto one of their performances while watching late-night TV and I can’t get enough! Brilliant performers and refreshingly creative music and dance!

WHAT ARE YOU MOST EXCITED FOR AT  BOUDIN, BOURBON & BEER THIS YEAR?:

My favorite aspect of BB&B is getting to visit with so many wonderful chefs, both from here and elsewhere. It is the side benefit of culinary events of this nature. As always, I also take great pleasure in seeing the Culinary Arts students from NOCCA in action. It is a priceless opportunity for them to interact with some of America’s finest chefs.
