Chef Jim Shirley is the chef and owner of the Great Southern Café and 45 Central in Seaside, Florida, and The Bay restaurant on the beach of Choctawhatchee bay. He partners with The Meltdown on 30A, The Baytowne Melt in South Walton, and The Fish House and Atlas Oyster House in downtown Pensacola. He is the author of “Good Grits! – Southern Boy Cooks” and wrote a food and wine column for the Pensacola News Journal for nine years. Jim is currently on the board of directors for the Seaside Neighborhood School, Children's Home Society and the Florida Restaurant & Lodging Association.
