Marcello's Restaurant & Wine Bar, New Orleans
Growing up on the small island of Anna Maria Island, Florida, John’s love for Southern food and the culinary arts began to grow. Starting at a young age, John and his brother would catch fish and shrimp to trade with local merchants in exchange for ice cream and other treats. John pursued an Advertising degree at the University of North Florida in Jacksonville, while also working in a restaurant, where he enjoyed the culture of the kitchen. After graduating, John realized his heart was not in corporate advertising, therefore, he decided to attend the Institute of Culinary Education in New York City. While attending culinary school, John worked on a dinner cruise ship as the youngest sous chef in the history of the company, at the age of 23. John finished his culinary degree and missed the southern weather and cuisine. Finally, in 2010, John moved to New Orleans to pursue his passion for southern cooking and continue to develop his culinary skills at local New Orleans restaurants. After spending time working as a sous chef at Cane and Table, John moved to the Windsor Court where he spent a year and a half working as a sous chef. Now, John has transitioned from the corporate kitchen to Marcello’s Restaurant & Wine Bar, a family-owned restaurant. Chef John is enjoying his time in the Marcello’s kitchen creating classic Sicilian dishes, while also featuring seasonal menu items.
