Brian grew up on a beef cattle farm in Florence, MS, and became fascinated with cooking over live fire at a young age while watching his Dad grill on the back porch of the family home. Brian was also heavily influenced by his mom and some incredible cooks on the female side of the family.

Brian started cooking whole hogs while in college for extra spending money. He has been cooking on the competitive BBQ circuit since 1994, and has been cooking with Ubon’s BBQ of Yazoo since 1996. Ubon’s has won over 30 Grand Championships on both the Memphis and KCBS circuits. Brian considers the friendships made throughout these years as the most important trophies that he has. He has traveled all over the country cooking BBQ with Ubon’s. These include the Big Apple BBQ Block Party, the Windy City Smokeout in Chicago, the Q’ in the Lou in St. Louis, the Kentucky BBQ Festival, and of course, New Orleans’ own Hogs for the Cause. Brian’s greatest accomplishment is raising three of the most incredible kids that there are.

Brian gives his wife Vivian approximately 97.48 % credit for this.

This is Brian’s first foray in Emeril’s event.
