Mark “Aubrey” Cole opened Don’s Specialty Meats in Carencro, LA in 1993, and has been making the same great homemade/handmade boudin since. Don’s boudin has been voted “best” 13 years in a row, and the cracklins are know as south Louisiana’s best. Don’s holds the title of the highest retail volume sales in the state for boudin and cracklins. He offers a family of boudin products including boudin pistolettes, boudin tater tots, boudin balls w/pepper jack cheese or regular, boudin burritos, seafood boudin and smoked boudin. Last year Don’s Specialty Meats sold 785,000 lbs of boudin; thats alot for it being a regional food. In October 2005 Don’s opened a second location; the response was an overwhelming welcome to Scott, LA by locals and I-10 travelers. Don’s was a big part of Scott becoming “the boudin capital of the world”

In 2013 Don’s launched an ecommerce store online with over 300 items and are now shipping boudin from Key West to Hawaii.

Don’s Specialty Meats is a locally owned “old school” butcher shop, with specialty items that reflect the cajun culture. We are unique in that we offer homemade and authentic cajun foods from boudin to turkduckens. Another part of our business that is so special is the staff and team of 50, they care about the product we put out as well as the customer's experience.
