Emeril's Coastal Italian
Shane Quinlan is the Chef de Cuisine at Chef Emeril Lagasse’s newest restaurant, Emeril’s Coastal Italian located at Grand Boulevard in Miramar Beach, Florida.
Born and raised on the Florida Panhandle, Quinlan has always had a close connection with the water and seafood. He began cooking at the young age of fourteen and later attended culinary school at Johnson & Wales University in Charleston, South Carolina.
Upon graduating, Quinlan trained in the San Francisco Bay area with Westin Hotels & Resorts and Mirassou Winery before returning home to Florida, where he accepted a Sous Chef position at Marina Café in Destin. Chef Shane then became the Executive Chef over several restaurants at the Sandestin Golf & Beach Resort’s Village of Baytowne Wharf. Quinlan then took the helm of the Tommy Bahamas Restaurant in Santa Rosa Beach, Grand Boulevard which led him to accept a position in Las Vegas, where he further honed his skills opening a Tommy Bahamas Restaurant on the Las Vegas Strip. While in Vegas, Shane accepted a position with the PGA TOUR, overseeing culinary operations at TPC Summerlin.
Wanting to return with his family to the Emerald Coast and the Beaches of South Walton, Chef Shane accepted the position of Executive Chef over the Beach Club at Watersound and all of St. Joe Club & Resort’s golf clubs. Connecting with local purveyors and the local community led Chef Shane to launch his own business, a private Chef and Catering service, bringing top restaurant quality food and wine into the homes of the busy professionals and seasonal visitors of the South Walton area.
Quinlan brings years of experience, local knowledge and a deep passion for this Gulf Coast community to his position as Chef de Cuisine at Emeril’s Coastal Italian. Chef Shane will work closely with Chef Emeril to highlight the fresh seafood and remarkable local ingredients found on the Emerald Coast.
