We have an incredible lineup of over 60 chefs at Boudin, Bourbon & Beer this year! We asked a few of our participating chefs to answer some questions about the event. This week, we are featuring Chef Jay Ducote of Gov't Taco in Baton Rouge.
WHAT ARE YOU COOKING AT BOUDIN, BOURBON & BEER THIS YEAR?:
I'm going to be cooking a play on a boudin taco. I'll be using our custom flour/corn hybrid tortilla from Hola Nola Foods, braised pork shoulder, Supreme Rice, an array of pickled vegetables from red onion to jicama, and my Louisiana Molasses Mustard!
WHAT WAS THE INSPIRATION FOR YOUR DISH?:
Since my taco shop will be opening up in Baton Rouge's White Star Market this January, it makes sense for me to feature a taco. But also, my molasses mustard goes so well with boudin that it'd be a crime not to feature it. So we're combining the two for an epic boudin taco!
BOURBON OR BEER?:
That's a silly question! Fine bourbon AND craft beer!
FAVORITE MIDNIGHT SNACK?:
Movie theater popcorn with Reese's Pieces mixed in.
Cheesecake by Louis Armstrong, on repeat.
WHAT ARE YOU MOST EXCITED FOR AT BOUDIN, BOURBON & BEER THIS YEAR?:
I'm pumped to be there with all the other fellow chefs to celebrate and have a great time. I love connecting with all those ladies and gentlemen on the Louisiana culinary scene whenever I get the chance. I'm also really excited to be there with my Gov't Taco team this year as a participating chef rather than being there by myself as media!
