What are you most looking forward to at Carnivale du Vin?: I have looked up to Emeril since I was 8 years old, frequently visiting New Orleans with my parents. To be asked to be a part of something so special is a real honor.

Favorite junk food/comfort food?: Nacho Cheese Doritos
What is your favorite season to cook for?: Fall and Winter, our longest seasons in Chicago which gives us more time to test and run interesting dishes.
