Restaurant: The Purple Pig, Chicago

What are you most looking forward to at Carnivale du Vin?:  I have looked up to Emeril since I was 8 years old, frequently visiting New Orleans with my parents.  To be asked to be a part of something so special is a real honor.

If you could only drink 1 bottle of wine for the rest of the year what would it be and why?: Moschofilero Skouras

Favorite junk food/comfort food?: Nacho Cheese Doritos

What is your favorite season to cook for?:  Fall and Winter, our longest seasons in Chicago which gives us more time to test and run interesting dishes.
