SoBou’s Chef de Cuisine Daren Porretto is from a long line of New Orleans family cooks. He mastered Cajun and Creole Louisiana staples like Gumbo, Crawfish Etouffee and Shrimp Creole in his grandparents’ kitchen.
Daren began his career at Commander’s Palace in 2010 as a line cook who quickly worked his way up to a senior sous chef position in no time. After eight years cooking professionally, Daren decided to fulfil a lifelong dream and pursue his career opportunities in New York City. He spent time working for a few notable restaurants and even held a private chef position while living there. Although he enjoyed his time in New York City, the culture and food of New Orleans were calling him home.
Now back in New Orleans, all of the reasons why he loves being a chef in Louisiana are flooding back to him. Darren is happy to report that nowhere else in the country has flavors like ours! He is excited to have locally sourced seafood on the SoBou menu, as well as the chance to experiment with Louisiana street food ideas.
Some of his favorite dishes to cook include anything with crawfish, oysters and local crispy soft-shell crabs. And he admits he loves to make turtle soup.
